Thank you for your interest in our grist-mill products. Our business is family operated and located in the small farming town of Nickelsville, Virginia. Our desire is to create nourishing food with the highest quality ingredients.

We offer a variety of artisan quality, stone-ground grain products including flours, corn meals and grits, as well as a range of baking mixes, granolas and even gluten-free products.


Our Quality

In striving to offer our customers high quality product lines, we choose to use organic-certified wheat, oats, and corn grains in our milling operations. Our use of traditional stone-burr mills ensures low-heat production that retains the rich flavors of the natural grain, and retains the highest nutritional value in the end products.

For our mixes, we combine our wholesome organic grain products base with other wholesome spices, sugars, dried fruits, nuts and so on that are not certified organic. Our commercial food handling, kitchen facilities are state-certified for public health, but we have not felt to pursue organic certifications that would be needed for our facilities and mixes to label our market products as ‘organic’. The taste and quality of our food lines speak for themselves.

Wholesome & Fresh

Whole grains have been cherished as the ‘staff of life’ across the globe, for thousands of years, because they are almost universally held to be a major component in sustaining life. Ceaselessly valued for building and sustaining strong bodies, the actual crushing of the grain helps unlock nutritious and beneficial substances in every particle, making the rich vitality of every part more available and easily digested. Of course, the textures of baked products are also improved by milling.

Whether corn kernels, oat groats or wheat berries, we use only grains that are certified-organic to bring you the highest quality and safest purity of grain products available.

Not only does milling maximize the utilization of lively vigor and strength of grain nutrition, but reducing whole grains down to finer particles also amplifies the perception of delicate flavors and smells at the table. 

Using fresh-ground flour maximizes utilization of the life-giving aspects of the grain, so we strive to mill our products as near to the point of sale as possible. We are a family operated mill striving to build our customer satisfaction on the delivery of quality and freshness. Our products have a highly viable, un-opened shelf-life of 8 months. We mostly mill-on-demand (at the time we receive orders), which offers you our best product. After purchase, you may choose to freeze the products and extend that viability up to 2 years.

Unlike industrialized milling operations that maximize the retail shelf-life of their products by removing nutritional quality from the flour (which simultaneously lowers the health benefits), we do not add natural or artificial flavor enhancers, chemical preservatives, nor do our products need to be enhanced with vitamins to make them last longer.

While we only use certified-organic grains to mill for the base ingredients in our mixes, we add high quality natural sugars, spices, nuts, dried fruits and rising agents. Our Grains

Flours

We carry three kinds of wheat berries classed as hard winter red, hard winter white and soft-spring white. 

Whole-grain flours retain the broadest spectrum of flavors and character (un-sifted flours have not had the fibrous bran and germ particles removed). 

Sifted flours have reduced bran-fiber and germ particles from the flour by sifting, thereby increasing the percentage of glutens necessary for rising light and fluffy breads, and yielding a more subtle taste. 

Gluten-free Flours are for folks who are gluten intolerant, so we also offer a line of non-grain products made from nuts and seeds. Our gluten-free mixes retain healthful nutrition without sacrificing delicious flavors. 

Corn Grits, Corn Meal and Corn Flour

Home-based in Virginia, our grits are a staple on breakfast tables across the south, but are as likely to be found as savory, cheesy and spicy additions to round-out lunch celebrations and evening dinner delicacies. We recently were invited to serve our grits at a banquet in which three East-coast governors attended. Then there are also the markets that range from farmers' markets to daily offerings for chefs at fancy hotels and a range of restaurants cuisines.

We offer the traditional favorites made from white and yellow corn, but we also process a blue corn version for the gourmet pallet. We find white corn enjoys the first-place in sales with a warm-white showy presentation at the traditional table. But then yellow corn runs parallel in flavor and holds the special eye- appeal for those who lean toward color enhancing flavor. Try them all and you decide. We crack the corn into small chunks the time-honored way, but our unique process retains more of the soft inside matter to provide a superb creamy texture when cooked.

Creamy Cheese Grits



Creamy Cheese Grits - New recipe!!

This is our absolute favorite way to prepare our stoneground grits.

Recipe makes 6 servings.

  • 2 Tbsp butter
  • 1 cup diced onions
  • 4 oz. green chiles
  • 1 quart of water
  • 2 quarts of milk
  • 3 cups of grits
  • 3 tsp. salt
  • 1/2 tsp. black pepper
  • 1 cup of shredded cheese

Melt the butter in a saucepan; add onion and sautè until translucent.

Add green chiles; cook briefly

Pour in milk and water; bring to a simmer.

Whisk in grits and cover, be careful not to let it boil over. Simmer for about 30 to 45 minutes, stirring occasionally until the grits are soft.

Add the salt and pepper.

The best part! Fold in the cheese and serve!
